Storage & handling
Keep refrigerated at 40°F or below. Store oysters cup-side down in an open container or tray, covered loosely with a clean, damp cloth to help maintain moisture. Do not store submerged in water or in an airtight container. Keep oysters cold until ready to shuck, and discard any with cracked shells or shells that remain open when tapped. For best quality, enjoy as soon as possible after purchase.
