Magallana gigas

Also known as Little Skookum Oyster, Japanese Oyster, Pacific Oyster

Grown in the protected waters of Little Skookum Inlet in southern Puget Sound, Washington, Skookum oysters are beautifully deep-cupped Pacific oysters known for their plump meats and rich, distinctive flavor.

Skookums offer a delicious balance of sweetness and mild brininess, with a buttery texture and subtle earthy, mineral and vegetal notes on the finish. Their protected growing waters and nutrient-rich environment give these oysters a flavor that reflects their unique Pacific Northwest merroir.

Excellent served simply on the half shell with a squeeze of lemon or mignonette, Skookums are also sturdy enough for grilling or baking. Their approachable salinity and rich, plump texture make them an especially crowd-friendly choice for oyster lovers and newcomers alike.

Sustainability status for this species is published by NOAA Fisheries.

Safe to eat raw?

Skookum oysters are commonly enjoyed raw on the half shell. As with all raw shellfish, consuming raw or undercooked oysters carries a risk of foodborne illness. Individuals who are pregnant, elderly, immunocompromised, or otherwise at increased risk should avoid raw shellfish.

Storage & handling
Keep refrigerated at 40°F or below. Store oysters cup-side down in an open container or tray, covered loosely with a clean, damp cloth to help maintain moisture. Do not store submerged in water or in an airtight container. Keep oysters cold until ready to shuck, and discard any with cracked shells or shells that remain open when tapped. For best quality, enjoy as soon as possible after purchase.
