At our Farmers’ Markets, we call Black Snapper Grenadier. It is also commonly referred to as “Pacific Roughy,” and if you’re a fan of the Orange Roughy, then you’re in luck.
The name doesn’t lie; it tastes like the Orange Roughy’s smarter, better-looking, more sophisticated, Pacific cousin. We often suggest it to market customers who either aren’t sure they love fish (duh) or have children that are picky.
It is mild, flaky, and delicious. UG-LY as heck though, man––what a fish! I’m not even going to post a picture on here it’s so ugly.
In general, you can easily use any snapper recipe you enjoy for Grenadier. It has a bit of a finer smaller grain than most “Red Snapper” or Rockfish. This is part of what makes it so delicate and tasty, but it adapts to most snapper recipes just perfectly.

Introducing our delightful Black Snapper, locally known as Grenadier. This fine specimen of the sea is also fondly dubbed as "Pacific Roughy". If you've previously savored the Orange Roughy, then this gem of the ocean will not disappoint.
The delightful flavor profile of the Black Snapper mirrors that of its Pacific cousin, the Orange Roughy, but with a touch of added sophistication and charm. We frequently recommend it to our market visitors who are yet to discover their love for fish or have young ones who can be selective with their food choices.
The Black Snapper is delicately mild, effortlessly flaky, and incredibly delectable. Despite its less than flattering appearance – it's not winning any beauty contests, we must admit – this fish offers an exceptional dining experience. But, don't worry, we'll spare you the visuals on here.
Don't hesitate to substitute any snapper recipe you fancy with Grenadier. The texture might be slightly finer and smaller grain compared to most "Red Snapper" or Rockfish, but that's what contributes to its delicate and tasty nature. Plus, the Black Snapper adapts beautifully to most recipes designed for snappers. In conclusion, it's a versatile, delicious, and an all-round fantastic choice for your next seafood feast.
