Whole Pan-Fried Sand Dabs

Sand Dabs are a local delicacy so thank your lucky (sea)stars that they’re in our backyard of Monterey Bay. You can grab them year-round at our Harbor shop or any of our farmers’ market locations. Sand Dabs are full of flavor and easy to enjoy––try this recipe to believe it :).

Ingredients

  • Oil of choice (preferably high smoke temp like peanut or avocado oil)
  • 2 tbsp unsalted butter 
  • 4 cloves garlic 
  • 5 whole sanddabs 
  • Salt (to taste)
  • Black pepper (to taste)

Instructions

Heat your skillet or pan (medium-high to high-heat) with 4 tbsp of your oil of choice and a 2 tbsp knob of butter .

Salt and pepper your whole Sand Dabs (both sides.)

Place the Sand Dabs into the skillet. If we don’t hear sizzling, we don’t want it! Throw in 4 cloves of minced garlic… or more, we won’t judge. 

When the fish start to get crispy around the edges, give them a flip.

Voila! Fillet/debone your fish and enjoy :).
