Keep refrigerated at 40°F or below. Store live oysters in their shells in an open container or tray, covered loosely with a clean, damp cloth. Do not store submerged in water or in an airtight container. Keep cold until ready to shuck. Discard oysters with cracked or broken shells, as well as any that remain open when tapped. For best quality, enjoy as soon as possible after purchase.
