Shigoku oysters are premium, tide-tumbled Pacific oysters grown in Washington’s Willapa and Samish Bays. Constant movement from the wind and tides shapes their smooth, sturdy shells and remarkably deep cups. Inside, you’ll find plump, crisp meats with balanced brininess, delicate cucumber and melon notes, and a clean, subtly sweet finish.

Safe to eat raw?

Shigoku oysters are commonly enjoyed raw on the half shell. Keep them properly refrigerated and shuck just before serving. As with all raw shellfish, consuming raw or undercooked oysters may increase the risk of foodborne illness. People who are pregnant, immunocompromised, older, or living with certain health conditions should enjoy oysters fully cooked.

Keep oysters refrigerated at 40°F or below in an open or breathable container covered with a clean, damp towel. Store cup-side down to help retain their natural liquor. Never submerge live oysters in fresh water or store them in an airtight container. Before shucking, rinse and scrub the shells under cold running water. Discard oysters with cracked shells or those that remain open when gently tapped. For the freshest flavor and quality, enjoy promptly after purchase.
