Oncorhynchus tshawytscha

Also known as King Salmon Collars (Chinook)

Rich, buttery, and full of flavor, king salmon collars are a favorite among those who know where the good stuff hides. Cut from just behind the gills, these portions feature tender, juicy meat tucked around the collar, with skin that crisps beautifully when cooked.

Our collars are cut from king salmon that were frozen at sea (FAS) to preserve quality and flavor. Sold thawed and ready to cook, they’re excellent grilled, broiled, or roasted. Keep it simple with salt, pepper, and a squeeze of lemon, or brush with a miso glaze for a savory finish.

Serve with plenty of napkins and dig in—the best bites are worth getting a little messy for.

Sustainability status for this species is published by NOAA Fisheries.
