From time to time, even when local halibut season is open, we aren’t always able to get our hands on the quantity or quality we’re looking for. Rather than leave a gap in the case, we’ve brought in a beautiful Nordic Halibut raised through sustainable aquaculture in the cold, clean waters of Norway.

Known for its pristine quality, firm texture, and mild, buttery flavor, this is a thoughtfully sourced option that meets our high standards. Responsibly raised with careful stewardship and strong sustainability practices, this halibut is harvested to order, immediately chilled, and shipped in tightly temperature-controlled packaging to preserve freshness every step of the way.

Distance can sometimes raise questions about freshness, but what matters most is how carefully fish is handled after harvest. This halibut is processed and packed right away, kept just above freezing throughout transit, and shipped quickly by air. Modern cold-chain logistics allow this fish to arrive in excellent condition, often just as fresh as products moving through multiple domestic distribution steps.

Typical cold-chain timeline:
• Fish harvested
• Immediately bled and chilled
• Packed in insulated boxes with gel ice
• Air freight (often within ~24–48 hours)
• Delivered to distributor or directly to retailer
• Cut fresh for the case

Because the temperature is carefully maintained close to 32°F, freshness and quality are preserved extremely effectively.
